I’ve been on a real kick lately to introduce variety into our meals. I’m always pretty creative when it comes to meats and main dishes and even desserts but the side dishes could use a little improvement. It should be fairly easy but I tend to put all my energy in the main entree and the sides fall in as afterthoughts.
Not anymore! I’m on a mission to come up with wonderful and delicious sides for every meal. Last night, I made an amazing batch of fried chicken but I really wanted an accompaniment that was lighter and healthier than its counterpart. I came up with a salad that was light and filled with refreshing fruit. It was the the perfect pairing!
I combined juicy mandarin oranges with sweet fresh strawberries in a green spinach salad. It was a beautiful salad with bright colors and tasty flavor combinations. Previously, I found pomegranate vinegar at Trader Joe’s and knew it could be used in a delightful dressing. Combined with sugar, olive oil, and chives, it worked wonderfully to dress this salad. It was a real winner for my family.
4 cups fresh spinach
1 pound strawberries cored and halved
4 ounces feta cheese
11 ounce can of mandarin oranges drained
2/3 cup walnut pieces
1/2 cup olive oil
1/3 cup pomegranate vinegar
1 tablespoon sugar
1 tablespoon chives
1. In a large bowl, add spinach and top with strawberries, feta cheese, oranges, and walnuts.
2. In medium bowl, mix together olive oil, vinegar, sugar, and chives. Stir until sugar dissolves.
3. Serve with salad and enjoy!
