Dark Chocolate Chip Oatmeal Cookies

Hello fellow foodies! It’s January, right? It’s the time of year where everyone resolves to eat better, exercise more, and make positive changes. The holidays are over and most of us overindulged a bit and got a bit “fluffy”. I, personally, gave up sweet tea, soda (diet or otherwise), and caffeine. It’s been a week and I’m doing great; I did have some headaches at first but now I am sleeping better and feeling empowered. I had decided that those drinks were a big source of empty calories and things my body just does not need like large amounts of sodium.

Because I love to bake, I will never be able to give up making cookies and cakes. It’s my hobby and my passion. That will never be a New Year’s resolution for me. I do, however, try hard to keep all things in moderation. It’s an ongoing battle but I like to take it day by day. Today, I made the most wonderful cookies in my kitchen. They are flavored with delicious dark chocolate chips, oatmeal and cinnamon. They are simple but sublime. I had one cookie and then I worked out to an exercise video on Netflix. My five year old son was my workout buddy and he did a great job. He kicked his feet and wagged his arms in time with the lady on tv. She is probably 20 years younger than me so her movements were much more natural than mine. I didn’t care; I was giving it my all and my body will thank my later for burning off that cookie. Plus, my son doesn’t judge me yet for my erratic and uncoordinated efforts. Thank goodness for that!

Back to the cookies, my husband tried the them too and he loved them so I feel today is turning out to be a success. I just love a good recipe and this one is certainly a keeper.

Ingredients:

1 1/2 cups light brown sugar

3/4 cup salted butter room temperature

1 large egg

1 teaspoon vanilla

1 3/4 cups all purpose flour

1 teaspoon baking powder

1/2 teaspoon cinnamon

2 cups oatmeal

12 ounces dark chocolate chips (2 cups)

Directions:

1. Preheat oven to 350 degrees Fahrenheit.

2. In the bowl of a stand mixer, add sugar and butter. Mix on low until creamy in consistency.

3. Add egg and vanilla and mix on low until incorporated.

4. In a medium bowl, combine flour, baking powder, cinnamon, oatmeal, and chocolate chips. Stir until the dry ingredients are thoroughly combined.

5. Add dry mixture to ingredients in mixer. Mix on low until dough pulls away from the sides of the bowl.

6. On a cookie sheet, add 2 tablespoons of dough with a cookie scoop. These will be large cookies but they don’t spread much. Space them 2 inches apart.

7. Bake for 10-12 minutes. Cool and enjoy!
